S'mores Pops

Nothing says summer more than s'mores!  Even if you don’t have access to a fire pit, you can enjoy this tasty alternative.  Now, this doesn't replace the gooey-ness of a warm s'more - but they are GOOD!  

What you need:

  • Large marshmallows
  • Lollipop sticks (or I have used the sturdy paper straws in the past)
  • Milk chocolate chips
  • Shortening
  • Microwave-safe bowl and spoon, and another small bowl
  • Graham cracker crumbs
  • Wax paper
  • Cookie sheet

STEP 1: Poke one stick into each marshmallow. It should not go through, but I usually push it until I can feel it on the top of the marshmallow.

STEP 2: Melt the chocolate and shortening in the microwave. Start with 1 cup of chocolate chips and 1 tablespoon of shortening. Microwave for 30 seconds, then stir. Microwave for another 30 seconds and stir. When you stir, you want to make sure you are stirring for a minute or so. You want the chocolate to melt, not burn. Often, if you stir well after 1 minute you will get all the chocolate to melt. If you need to microwave it longer, try 10 second intervals from here on out. Dip each marshmallow into the melted chocolate - allowing any excess to drip off.

STEP 3:  Immediately place the still-wet chocolate covered marshmallow into a small bowl of graham cracker crumbs.

STEP 4: Place them on a wax paper-lined cookie sheet when complete.

Repeat until all your marshmallows are done.  Then place the cookie sheet in the refrigerator for a few minutes to set.  Depending on how warm it is in your house you may prefer to leave them in the refrigerator until you are ready to eat, or, once they are set, you can store them in an air-tight container on their sides.
